Chipotle Pilots Mexican Cauliflower Rice in Select Locations

The new keto-friendly limited time offering follows the successful cilantro-lime version.

Chipotle Mexican Cauliflower Rice

NEWPORT BEACH, Calif.—Chipotle Mexican Grill is testing a new menu item, Mexican cauliflower rice, at 60 locations in Arizona, Southern California and Wisconsin, according to a news release. The option is available for a limited time and can be added to any menu item or as a side for an additional cost.

"After the success of our Cilantro-Lime Cauliflower Rice last year, we are eager to test a second plant-powered start for any go to order," said Nevielle Panthaky, vice president of culinary. "Our guests crave real, plant-based options so we developed a new flavor packed recipe that aligns with our Food with Integrity standards."

In January 2021, Chipotle offered a cilantro-lime cauliflower rice across all U.S. and Canadian restaurants. The company said the offer added incremental sales and attracted new customers to the restaurant. Chipotle estimates that 1 in 5 cilantro-lime cauliflower rice orders in January 2021 were from customers trying Chipotle for the first time.

The Mexican cauliflower rice is grilled in small batches and then seasoned with spices, including garlic, cumin, salt and paprika. The rice is keto, vegan, vegetarian, paleo and made with grain-free ingredients. Chipotle is offering a $0 delivery fee offer on orders of $10 or more that include the Mexican cauliflower rice through June 21.

In its most recent quarterly results released in April, Chipotle said sales at established locations rose 9% in the three months ended March 31, reports CNBC.
