This Spring Is All About Lavender Coffee

Starbucks announced lavender drinks last week; Caribou Coffee follows suit.

Last week Starbucks debuted two lavender drinks: iced lavender cream oatmilk matcha and iced lavender oatmilk latte.

“Lavender is the perfect flavor to transition us from the winter season into spring,” said Patrick Penny, Starbucks beverage developer. “Its soft sweetness, light floral notes and beautiful color ignite feelings of rejuvenation and awakening associated with the change of seasons.”

“When creating the new iced lavender cream oatmilk matcha, we wanted to capture the uplifting energy of spring in a cup,” Penny said.

Caribou Coffee announced this week that it has added lavender to its lineup of beverages.

The new lavender-infused lineup from Caribou Coffee includes:

  • Honey lavender latte: Lavender syrup with honey, espresso and steamed milk. Available hot or iced.
  • Honey lavender shaker: Fresh espresso shaken with lavender syrup, honey and ice topped with a splash of oatmilk.
  • Iced white mocha with lavender cold foam: White chocolate, espresso and cold milk served over ice; topped with lavender oatmilk cold foam.
  • Lavender matcha tea latte: Matcha tea powder with real lavender syrup with steamed milk. Available hot or iced.
  • Frozen lavender matcha with bubbles: Matcha tea powder blended with ice, lavender syrup, half and half and Caribou signature shake mix; served over coconut coffee jellies.

Guests can also add real lavender flavor to any of their other favorite Caribou Coffee beverages for an additional charge.

A Newsweek article from November 2023 predicted that lavender would be a major flavor trend this spring, and noted: “Edible florals in particular are gaining traction in food, according to recent studies by the Institute of Food Technologists (IFT). They include botanicals such as rose, hibiscus, jasmine and lavender.”
