Customer Data Lead Innovation at C-Stores

Fresh food, made-to-order programs and store layout are a growing priority for c-store owners.

KANSAS CITY, Mo. – Data from global market research firm Mintel indicate that nearly 75% of c-store foodservice customers say the food has improved, but only 36% are satisfied with the available healthy options. Food Business News says that stores are listening – and providing healthier and premium food options as a result.

A Gonnella Baking Co. executive says that made-to-order programs are popular and are the “next evolution where much of the future innovation will take place.” So, bakeries are expanding their opportunities to experiment—and offering c-stores something new along the way.

As consumers are redefining the way they shop and eat, c-stores should listen. The data provide an opportunity for innovation and creativity in the industry.

Take baking and cooking on site, for example. In-store bakeries and kitchens can require bigger infrastructure and more staff but also can differentiate a store from the competition. It could even build brand loyalty and create a more memorable experience that keeps customers coming back.

And although healthy options are becoming a larger focus for the industry, shoppers are still gravitating toward snacks that can get them through the day. C-stores are creating new strategies and layouts to increase visibility and display and focusing on the size and variety of options.
