NEW YORK—Just a few weeks after 7-Eleven announced plans to expand its Evolution Stores concept, the c-store giant is continuing to push further into the foodservice sector with the opening of a new restaurant, “Raise the Roost Chicken & Biscuits.” The Southern-inspired quick-service concept will open this month at a test store in lower Manhattan in New York, says Nation’s Restaurant News

This isn’t 7-Eleven’s first move into the restaurant space: The new Evolution stores in Washington D.C., Dallas and soon-to-be San Diego are the first 7-Eleven locations to integrate restaurant concepts into the store design. In March 2019, the company opened a Laredo Taco Company test store in Dallas. Similarly, the new Raise the Roost Chicken & Biscuits will share space with one of the Evolution Stores.

“On-the-go customers are looking for high-quality, differentiated food options and 7-Eleven continues to explore new concepts that meet that demand,” said Joe DePinto, 7-Eleven’s CEO and president, in a statement. “Raise the Roost offers craveable food and generous portions at prices below what you'll find at most fried chicken establishments."

Customers will be able to get made-from-scratch, breaded fried chicken tenders, wings, chicken sandwiches and breakfast sandwiches—including grab-and-go options.
