Farmer’s Fridge has proved made-from-scratch foods in a vending machine is possible.

CHICAGO – Farmer’s Fridge has developed a fresh approach to vending foods, Vending Times reports. The company stocks its vending machines with fresh, made-from-scratch foods that use organic ingredients from area farms as much as possible. The snacks, sides and salads are packaged in recyclable plastic jars. The machines are stocked by 10 a.m. daily.

Farmer’s Fridge developed its own machines, made from reclaimed barn wood and featuring touchscreens, which show images, nutritional information and ingredients on-screen. More than one item can be purchased at a time. The machines also accept empty plastic containers in a separate bin.

Menu items include a baked tofu, poached salmon, lemon chicken and a high protein salad with broccoli, chickpeas, corn, figs, Parmesan cheese, peas, pumpkin seeds, quinoa and spinach. Sides and snacks range from sliced vegetables and cauliflower fried rice to Greek yogurt parfait.

To help move inventory, the machines automatically reduce salad prices by a buck at 6 pm. Each morning, unsold salads are removed and donated to a local food pantry. As it boasts on its website, “Don’t think of the Farmer’s Fridge kiosk as a vending machine. It’s a veggie machine.”
