NACS CAFÉ Offers Advanced Foodservice Finance Program

Upcoming program provides a winning recipe for successfully managing a c-store foodservice operation.

ALEXANDRIA, Va. – Convenience retailers from across the country will learn how to maximize profitability by integrating the financial activities of a foodservice operation into their organization’s strategic business plan at NACS CAFÉ’s upcoming Advanced Foodservice Finance program.

Taking place July 9–10 at Kraft Corporate Offices in Northfield, Illinois (just 30 minutes from downtown Chicago), participants will learn how to tackle tough foodservice challenges and identify hidden opportunities to increase profitability, using case studies and data from their actual companies.

An expert in his field and former restaurateur, Dr. Richard A. L. Caldarola, CMA, CFM, Sorrell College of Business, Troy University, Atlanta, will lead the discussion, revealing financial management techniques and revenue strategies that are critical to a successful foodservice operation. At the end of the two-day program, participants will:

  • Understand the benefits and detriments of various foodservice operation models
  • Design sales and expense forecasting procedures for foodservice operations
  • Develop pricing strategies for foodservice products (compare and contrast foodservice pricing methods to traditional retail/markup pricing systems)
  • Know how to use Product Mix (P-Mix) margin analysis for keep-drop-add line and product decision making
  • Understand inventory control systems and procedures for foodservice operations, including the financial implications of purchasing, costing, and inventory coding, and periodic versus perpetual system selection
  • Utilize financing methods for foodservice operations and how to establish capital expenditure requirements (calculate Capex ROI, and make-lease-buy decisions)

In addition to hands-on instruction, participants will have the opportunity to network with other industry executives who are focused on growing the foodservice category of their businesses. This is the first of several advanced two-day programs that will be offered in 2014 by NACS CAFÉ designed to help convenience retailers develop more profitable foodservice operations.
